Recently I have been loving making meals fresh and from scratch and experimenting with different ingredients and that's when I came across this deliciously healthy tomato soup. It is so quick and easy to make and tastes absolutely wonderful.The use of cashews in this recipe gives the soup a lovely creamy consistency. It's low on calories and carbohydrates and is an excellent source of protein and iron.
I'd say that this recipe takes all of 10 minutes to make - 5 minutes to prepare and 5 minutes to cook.
Ingredients
1 and a 1/2 cup of tomatoes (chopped)
1/4 cup of cashews
1/2 water
1/2 teaspoon salt
1/2 clove of garlic
Sprinkle of pepper (optional)
Method
Put all the ingredients together into the blender (expect for 1/2 a cup of tomatoes, save these!) Make sure everything is blended nicely together until you get a thick-ish consistency.
Transfer the soup into a pan, add the remaining tomatoes and heat gently on the hob for about 5 minutes or until warmed through. Don't allow it to boil.
Add a sprinkle of pepper if desired and serve.
It literally is as simple as that. I hope you enjoy it as much as I do.
